Valdobbiadene Prosecco DOCG "Spago" becomes a contemporary interpreter of a centuries-old tradition of these places: the string binding. An ancient technique once used by winemakers to prevent bottles of sparkling Prosecco from uncorking during natural fermentation and re-proposed on the market by Mionetto in 1961, it is still made by hand by specialized operators.
In order to obtain fine and gentle bubbles, after an accurate white vinification, the sparkling process follows in autoclave until it reaches about 2,5 atmospheres of pressure.
5,5 - 6,5 g/l.
10 - 14 g/l.
It is recommended to serve it at a temperature of 8°-10° C reached with gradual cooling.

Fragrant and aromatic, it is well suited to accompany aperitifs based on fresh or medium-aged cheeses and regional sausages. It is also excellent with light fish dishes, such as rice with prawns, zucchini and cherry tomatoes, or with white meat.
A large goblet, preferably tulip-shaped, is ideal to fully appreciate its organoleptic nuances.
