We have named our Brut "San Salvatore", after the hill on which stands the castle of the same name. In the highest part of the hill, well ventilated and where the soil is more rocky, there is the vineyard from which we harvest the grapes for our Brut.
A fruity and fragrant Brut, which rests on the yeasts for four long months, as per tradition, and gives us a creamy and thin bubble that makes us immediately happy.
The Brut is the sparkling wine of great occasions, which the Counts of Collalto uncorked to inaugurate the great feast at the Castle of San Salvatore and toast at the beginning of the agricultural season.
This Prosecco represents the version most anchored to the territory of origin and the most natural interpretation of the characteristics of the Glera grape variety. It has a beautiful straw yellow colour with light greenish reflections, demonstrating its great freshness. The perlage is persistent, elegant and regular and explodes in a thick and lively foam. On the nose its fragrance characteristics reveal notes of freshly ripe Golden apple and Williams pear, on a delicate and pleasant floral background. On the palate its freshness dominates, without ever prevailing, over the other taste sensations in a persistence and complexity absolutely worthy of note. Excellent as an aperitif, it goes well with fish appetizers, delicate fried fish, soups and vegetable-based risottos.
It is recommended to serve at a temperature of 6-8°C.
