The Bosco del Gaio, from the Longobard "Gahagi" - bandit land, reserved, is located on the hillside of San Salvatore and looks south. The forest has always been a great source of wealth for the community who find there wood, game and delicious fruit.
This beautiful grove, which bounded the crops and vineyards, was reserved for the Lords of the Castle; Count Rambaldo VIII used to go there to hunt and there they gathered berries, mushrooms and the delicious chestnuts that enriched the banquets of the castle.
A precious place reserved for a select few, like our Gaius, a harmonious and refined prosecco with its scents of acacia and elderflowers.
It is the version universally most requested by the markets, the one that, respecting the ampelographic characteristics of origin, satisfies the modern needs of the consumer's taste, directed towards increasingly softer products. It has a pale straw yellow colour. Its perlage is fascinating and persistent. Its bouquet is ample and delicate, reminiscent of freshly ripe white fruit, with apple predominating, and very subtle floral tones. Its acidity balances the impact of the sugars and the overall structure of the wine, making it decidedly fresh and well balanced. Ideal in combination with cold cuts, with vegetable soufflé, salted mousse, molluscs and shellfish, light fish sauces, fresh or soft cheeses.
Serving at a temperature of 6-8°C is recommended.
