COLOUR AND PERLAGE
Straw yellow with greenish reflections, fine and persistent perlage.
Bepi Bubola, is the nickname of Giuseppe Dal Din, founder of Dal Din Spumanti. This was his wine, which reflects the origins and tradition of our territory. Obtained from Glera, Bianchetta and Perera grapes, this wine is bottled at the beginning of spring (after the harvest) and thanks to its native yeasts it referments naturally. It is a wine in continuous evolution, always different.
A few months after bottling it expresses fresh and fruity aromas and a young "taste". The more time passes the more the contact with the yeasts makes it complex, dry and sapid, with pleasant hints of bread crust. You can drink it veiled, shaking the bottle to bring the "bottom" back into suspension, but the maximum fineness is obtained by slowly pouring it into the carafe, avoiding making it cloudy. It goes well with the whole meal, in particular with cured meats and Veneto cheeses.
