Mionetto was born in 1887 from the love and passion for the land and for the work in the cellar of the master winemaker Francesco Mionetto, founder of the family. Nestled in the hills of Valdobbiadene, the cradle of Prosecco, Mionetto has been able, over a century of history, to interpret its territory of origin and become one of the most representative wine and Prosecco producers on the international scene. Passion, tradition, research and excellence are the founding values of a unique winery and brand, with an unmistakable style like its Prosecco.
The total acquisition of the winery in 2008 by the German Henkell & CO Group. Sektkellerei KG (now Henkell Freixenet) based in Wiesbaden, one of Europe's largest producers of bubbles, has brought further growth opportunities in terms of both the context and international markets. Since the early years of its foundation, Mionetto has been characterised both by its modern and innovative imprint and by its ability to anticipate fashions and trends while maintaining close ties with the culture of its native territory, which still distinguishes it today in the world of bubbles.
In 1982, Mionetto introduced the fermentation in autoclave with the Charmat method, which allows a better preservation of the flavors and aromas of Prosecco. After a first phase of processing relating to soft pressing and a first fermentation at controlled temperature that takes place at selected winemakers, in the Charmat method the second fermentation takes place in autoclave instead of individual bottles. For Prosecco, this further fermentation at controlled temperature is recommended to help maintain the freshness and aromas typical of the grape variety during bottling. The work of oenologists in Mionetto is therefore not only dedicated to the production of a high quality wine, but also to maintaining an effective collaboration with local winemakers who have historically supplied the grapes for entire generations. It is in these historical relationships that Mionetto has been able to guarantee an excellent quality level of the grapes purchased and dedicated to the internal winemaking process.
